backup, restore woes

Hello -
I should be a beta tester, I seem to find problems where none existed before (?).
I've been using such devices as WD Passports to try to backup linux data files - pictures, source code and other text, etc. Also to copy these files to another linux computer - FAIL.
I don't use canned software, just copy and paste with mouse, folders and all.
The files are restored (using copy, paste) to the other linux machine as linux executable. Listing them in a terminal, they are all *green* (colors enabled). Of course, mixed in there at various levels are directories, which must be 'executable' to work. Thus, trying to unset the 'executable' attribute on just the right files (and not others) becomes 'difficult'.
So I wonder: IS there a simple way to restore all these files without the 'executable' attribute (bit?) set - but only on the ones not needing it? Going thru one-by-one I gave up after an hour or so. NOT a solution.
Using USB (2) thumb drives takes approximately forever. But now that's what I'm reduced to.
Now I am also interested in a smallish linux backup tool which will work on these common backup drives, all that I have are USB 3. I'm looking in the slackbuilds at 'flexbackup', for instance. Hopefully one of these programs will bypass this problem. Just talking about small jobs here, 100 GB or so max.
