We're sort of in a pre-enlightenment period of the science. It's not that I'm horrible at cooking, it's that so many people are so much better, skilled, and experienced and in addition in my opinion these countries have an accessible food culture beyond any other places. I read a philippine food magazine today and it reminded me of how much I miss it.
