What distro and server HW will fit my needs?

Short intro:
I have started on a longtime project to increase my internet privacy.
To achieve this, I have found that Linux is the path to go.
It is many years since I build a computer so I am lost in the HW jungle, and I have no Linux knowledge at all.
After hours of browsing, I am still overwhelmed when it comes to getting started.
What I try to achieve:
I want to set up a server, where I can install solutions to improve my internet privacy.
I have a domain, that I want to forward to a server placed in my home.
On this server I want to set up:
DNS server (Pi-hole)
Webserver (Simple webpage behind login, very few users)
Homeseer (Requirements: Debian or Ubuntu)
Ubiquiti Network Management System:
Requirements:
Ubuntu 16.04.1 LTS (Xenial Xerus) 64-bit
Ubuntu 18.04 LTS (Bionic Beaver) 64-bit
Debian 9 64-bit
2 GB RAM (Minimal)
16 GB storage (Minimal)
64-bit (x64) CPU
Local Ports:
80 (Let's Encrypt certificate automation)
81 (Suspension page)
443 (UI, API, Devices connector)
Nextcloud:
Requirements:
Ubuntu 18.04 LTS (recommended)
Red Hat Enterprise Linux 7 (recommended)
Debian 8 (Jessie), 9 (Stretch)
SUSE Linux Enterprise Server 11 with SP3 & 12
openSUSE Leap 42.1+
CentOS 7
MySQL 5.x or MariaDB 5.5+ (recommended)
Oracle Database 11g (only as part of an enterprise subscription)
PostgreSQL 9/10
SQLite (only recommended for testing and minimal-instances)
Apache 2.4 with mod_php or php-fpm (recommended)

How do I get started?
Debian seems to be the most stable distro, but Ubuntu seems to be more suited for a newbee, correct?
So I guess I should start with Ubuntu 18.04 LTS
I tried to choose hardware for a server, and looked at:
ASUS PRO WS C246-ACE motherboard
Intel Xeon E-2246G Prosessor
But I found no Linux drivers on the Asus homepage when checking for Linux support.
It then hit me that I better get some advice regarding distro and recommended HW for this project.
