Migrate OS to RAID

After a boot fiasco, I wanted to bring this box from a single SSD, to a SSD RAID.
My ASRock box has room for 6 drives: 3 SSD, 3 3.5" normal drives. Currently, this is my setup:
1 SSD: / (CentOS7)
1 SSD: a volume for backups. I should be able to take this drive out with no repercussions, other than a mount on SSD 1 somewhere.
1 250GB 3.5" drive, which I'm using for current daily/weekly/monthly backups
(I also have other SSDs and thumb drives for rescue OS, etc. in case I need a mastermind OS to oversee all this.)
The UEFI has the option to see drives as single drives or RAID. I'm not sure if this comes into play with regards to setting up CentOS7 RAIDs. Two variables here.
I have two Crucial SSDs for the new RAID. My goal is to move the current OS onto this new RAID. I am looking for a RAID 5 setup.
There's room for all drives to be in place. It's just work from what I see.
I've seen another thread here somewhere, which states that it can be done, but UEFI will throw some issues. I'm not clear.
I'm thinking the following:
1. backup current OS onto storage drive
2. power off, unhook current OS SSD, insert 2 fresh RAID SSDS
3. Install minimal OS RAID through UEFI and CentOS RAID5 to get a base OS. Box running.
4. Somehow get the backup OS onto the RAID
Is this possible? Can this be done logically?
