Distro Installation Not Booting

So I've been running OpenMediaVault (runs on Debian Stretch) for a few years now. I run it via a USB stick. I had some issues with that in the past, strangely, where it wouldn't boot properly sometimes. Last year, I ended up buying a new USB stick, as the previous one just wouldn't boot anymore and I wasn't able to back it up previously. I had some issues, but eventually got it installed and booting.
A few weeks ago, the server stopped working again. And when I tried booting it up, it wouldn't. It drops out with errors, to BusyBox.
I was trying multiple USB sticks to reinstall and make a bootable stick, but it just doesn't seem to want to work anymore. I don't understand what's going on really, it keeps dropping to BusyBox with some random errors.
I bought two new 16GB USB sticks, as I thought that way, i could create an installer and the install onto the other one, and then I could make a backup straigth away onto the first stick so I don't have to go through this pain again...but evne that is not working.
What is really odd, is that when I run Linux Mint via a Live USB stick, it works fine, boots straight in no problems. I even tried installing onto the spare USB stick and Linux Mint boots up no problems?!?!
It's frustrating as I really liked the simplicity of OpenMediaVault for a media server for my personal storage, but I just don't know how to get it working again, my alternative is to try installing another distro maybe?
It's actually really depressing for me, as I just want it to work. It was a machine I built myself, mostly for home movies and family photos, so in the mean time my kids can't look at all their old memories that they love looking at :( I was contemplating just buying a new QNAP or Synology NAS box just to get things up and running again and scrap this linux box altogether...
If anyone has any thoughts, please let me know?
