Change Owner and/or Permissions on an old MasOS hard drive

I recently ditched both Windows and OS Mac for Linux so I am a novice (and also 68 years old). As part of this process I cloned my old Mac HD and installed Linus Mint on a new SSD. When I try to access and manage files on the old Mac HD it tells me I am not the owner and can't do what I want to do such as open, delete, copy files. I made a couple of attempts to chown and chmod on the old MAC HD to get access but it did not work as I hoped.
1. Is there a way to totally remove ownership and permissions from files and directories in Linus? If not, okay. If so, is it wise to do?
2. Is there a way that I am missing to change owner and permissions for a whole hard drive at one whack?
The old HD shows as \media\myname\Toshiba HD with the owner as "root" which I assume is root under the old Mac OS?
The individuals files and directories I would like to access show owner as "usr #501" and the group as "root" I assume "usr #501" was me on the old Mac OS.
I again assume I can't change owners and permissions on the Toshiba HD because even though I am "root" or superuser in Linux on my new SSD, I am not "root" on the Toshiba HD anymore?
Bottom line am I over thinking, under thinking, or doing it wrong?
