Trying to install Peppermint OS from live USB to another USB - can't see USB

Hi I am trying to install a full PM8 OS onto a clean USB from a live usb. On using the live usb to create the OS - the installation type page will not show the USB? I have mounted and unmounted the target USB. Makes no difference. How can I get the target USB to show so I can select it?
