Run QGis as efficient as possible on a Virtual System?

Hi
Currently QGis run on my Virtual Win7 who I do my normal office Work on.
Sure that is not so good because the AntiVirus slow down the Output.
I must do just 3 Steps:
1) Backup the "old" Data
2) Automatic (Update and) Download Updated Geo Data from the Various Open Data Sites (who I have the Links for).
3) After that I need to export the now Updated Map as Tiles who work in Win7 good. Sadly the need about 2 Weeks for the City of Vienna that is way to long.
So the idea is to take any Linux Distribution who run perfect on a ESXi who allow me to boost the performance as fast as possible. Sure I need a GUI to Update and craft the Map in that shape and Style I prefare (since its my Map).
So I the should put out a hole map for Europe.
That map should later move to my Webserver who the will available for everyone.
Which Distribution/ Window Manager is best for that?
