What is a easy to use OS? File Storage

So I've used a couple Linux Server OS's over the years. Something like Ubuntu > Debian > CentOS. I think it's CentOS now I'm really not sure. All I use my "server" for is storage anymore. Instead of having games installed on my desktop, I install them onto my server's network drives. My server is just an old gaming desktop that I recently upgraded to 12gb ram from 4gb, thinking it was a bottleneck, which it was not. It doesn't actively have a video card. I only put one in when needed.
I don't have any raid setup at this time, but would like to actually do something like that. Right now 1Gbe lan is fairly limiting. I see 10Gbe at some point in the future with raid. I essentially only upgrade a hdd every year or so. Every time I do it I just about have to relearn how to use ssh and the CLI. Last time I tried to upgrade it I couldn't get my samba user access to my new drive for a week until I found it was something with "chcon".
I've thought about getting a copy of windows 10 and using it as a file server. Probably get the version that has the remote desktop ability. But I just don't know how well that will work out. Then that one also cost a bit of $$. Is there a easy to use server OS? Right now I have 2x4TB and 1x2TB and am trying to swap out that 2TB for a 8TB that I've had waiting for at least a month to do this.
