Few industries have suffered as much under COVID-19 as restaurants. The summer resurgence of business gave eateries hope, only to see it dashed by the pandemic's powerful second wave. Frank Hennessey, CEO of Recipe Unlimited (formerly Cara Operations), has been watching the developments with deep frustration. His company (Torstar chair Paul Rivett is also chair of the Recipe Unlimited board) runs 1,300 restaurants coast to coast under such familiar banners as Swiss Chalet, The Keg and Harvey's. We caught up with him on the eve of the second lockdown in Toronto.
