Learning backup options on cloud servers

Hi guys. I am playing with a few VPS instances i got to learn and do experiments with, and one of the first things on the list is to manage backups.

I followed this tutorial on how to backup a whole system simply with the tar command:

I believe restoring a file like this, will overwrite any existing files and replace the OS, but then if there was another system, my logic tells me there will be a mess of leftover files from the previous installation that was overwritten right?

I would like to learn taking snapshots and remotely (or downloading) storing them, easy to just "flash" back on any virtual instance and have the server working again,
I believe rsync is the tool i should be looking at.

I have a test nextcloud instance on VPS1 that i want to clone to another fresh virgin VPS2.
