How safer is building img file?

I need to save large NTFS partition (300gb) with many .jpeg files errors.
I have deleted all of the other partitions and have no OS on the drive.
Can I use "Disks" to create IMG file and save it in another drive?
Is it better than doing copy and skipping all errors? It takes "supervisor" to skip the errors.
And can the image file be later restored into same , cleared drive, another drive ?
I would not ask if the current problem partition was much,much smaller , I would just do it.
