Linux questions regarding, open source video calling services and how to minimize your usage of data.

Hey all, so this should probably go in the dumb questions section as I don't have a frisking clue as to what I am talking about, but here goes.

I am interested in learning some Linux because I want to be free from the Microsoft/Apple monopoly, my other reason Is because from what I can understand there is a pretty large community of creators of useful open source apps and other bits of code, I suppose you can make them too with some understanding of Linux, but I don't think I would be able to anytime soon hah, so as an example a network wide VPN or a network wide AdBlock, or a Online Server/Cloud where you can store all your important files and not worry about losing them.

Now my question I suppose, is there any open source video communication service that is highly efficient? or if not is it possible to make something like this?

What I mean is different Video communication services use different amounts of bandwidth, Google hangouts uses more than say Zoom, and Zoom uses more than say Skype, As I work remotely this waste of bandwidth becomes very expensive at times when I need to use cellular internet, So it would be very beneficial to me if I could reduce that by using a open source program/service that is built to use much less Bandwidth.
