Wordpress frustration

I have a customer using Wordpress on my server. She keeps running into permission issues when updating or installing plugins.
So far the only fix" I've found is to chown all files to the web server user...but I can't leave things like that. Her normal maintenance doesn't work when that's set (and it seems a really bad idea anyway)
I've set the permissions as recommended by WP. I suspect there's something I need to do about ownership, but I'm not finding specific direction at Wordpress.org or anywhere else.
Any insight would be greatly appreciated.

PS. This after an upgrade to php 7.4...the upgrades of WP itself work just fine.
