Installed Linux (kubuntu) on separate nvme drive, boots into grub. Stuck here

Hi all,
Very new to Linux and apologies in advance for incorrect terminology etc.
My desktop PC is running Windows and I had a spare Nvme slot so I installed a spare drive I had lying around. I wanted to install Linux on it and did so using a kubuntu 21.xx iso file onto a USB burned to USB using Rufus and booted from USB to follow install process.
At the final stages of the install my PC just randomly shut off and upon rebooting I get taken to the Grub console.
I went into my bios and looked at boot options. It shows the hard drive I was expecting listed as Ubuntu but also changed my windows 10 harddrive to have a Ubuntu option too. There is still a windows boot manager option for my windows 10 harddrive and it will boot into windows fine if I set it as priority #1.
How do I fix my Kubuntu install? And as a bonus, would anyone know why it added a Ubuntu boot option for the windows 10 drive that I am certain I did not select to have any involvement during the Linux install?
Once I am in Grub I am beyond lost and would really need any commands that need entering, spelling out very simply.
