USB Format and Write Issue

Hi, I'm running the Raspberry Pi version of POP OS on Raspberry Pi 4 B and am trying my best to learn how to format and build a file system on a drive. I found a YouTube video (see link below starting at 13:24) and followed the video exactly creating a GPT partition table and exfat partition. Everything worked well, but now I can't write to the USB.
When I try to Nano create a text file on it by telling Linux to nano create at /media/USB_mount/test.txt and hit enter I get red words in Nano saying basically I can't write the file.
Is this a permissions issue or something else? I'm a little familiar with permissions, but instruction with how to change permissions would be great. I did try to chown to my user name matthewlawson on the mount point folder (USB_mount) and that worked until I pulled the USB drive out of the USB port and reinserted it. When I did a ls -l on the mount point folder I saw the changed owner had reverted back to root.
I'm at a loss and need some help. Thank you!
