Can you be tracked on a vpn?

I know you can't be tracked while you're on a vpn by others on the internet. This query relates to internal tracking.

We all know google apps incessantly trace your every movement: "He's searched for usb disks on ebay." "He farted." "He's writing stuff on LQ,"etc. Apple is no better. And every mobile app tracks your interests and sells your tracking data to google. Most websites also.

I have protonvpn, with a choice of exit nodes in various countries. I have the app on my mobile too. On my pc, resolv.conf has the nameserver 10.17.0.1. The proton0 device is listed in ifconfig and has the IP 10.17.0.10. Here's the routing table Code:Kernel IP routing table
Destination Gateway Genmask Flags Metric Ref Use Iface
0.0.0.0 10.17.0.1 128.0.0.0 UG 0 0 0 proton0
default fritz.box 0.0.0.0 UG 3003 0 0 wlan4
10.17.0.0 0.0.0.0 255.255.0.0 U 0 0 0 proton0
128.0.0.0 10.17.0.1 128.0.0.0 UG 0 0 0 proton0
146.70.133.130 fritz.box 255.255.255.255 UGH 0 0 0 wlan4
192.168.178.0 0.0.0.0 255.255.255.0 U 3003 0 0 wlan4
bash-5.1$ That needs translation. The fritz box is my router, IP 192.x.x.1. I have a fixed internet IP, 92.x.x.x

So, when my movements and flatulence are tracked, what IP do they see?

Further, when my geo-location is tracked by mobile what is seen? I'm aware there are a number of possibilities, of course. My IP number; My mobile number; my vpn proxy number; my phone's internal serial number. I'm aware of that, because after my phone's spontaneous combustion, I replaced the phone (of course) and the sim with my old phone number, but couldn't log in to my bank! So I rang the bank, and that's what they told me.
