Trying to repull up my running minecraft server command line

I have a minecraft server running on my Linux server for my friends. I just set it up in a folder and to start it, I navigate to the folder and run "java -jar paper.jar". Everything works great but once I close the log of the running server I can't figure out how to re open that log to view the command console for the server.

I have researched some and seen the screen command but it won't pull it up or I'm not using the command correctly. Please help.

Also I am sorry if this isn't the right thread to post this in it is my first post and I'm fairly knew to linux.
