Help needed with launching stuff on Ubuntu 24.04

I am not familiar with Ubuntu and I have not used Gnome since 1.2 (I think). That said, I have a laptop with Ubuntu 24.04 LTS and Gnome 46 on it, and I am having problems.
1) Files that are in ~/Desktop do not appear on the desktop. I understand that this is now a feature of Gnome, so where are you supposed to put stuff you use all the time ?
2) If I click on the Ubuntu icon on the bottom left, I get a whole bunch of apps I can run. What is the folder location of those launcher files ?
3) Amongst that bunch of apps I can run there is stuff I do not want or need. e.g. transmission, thunderbird, rythmbox etc, but if I try an apt remove, then I am told they are not installed. How do I get rid of them to free disk space ?
4) The /snap folder is HUGE. It occupies 34% of my disk space. Can I safely get rid of it ?
