seeking HOWTO get a detailed log from GRUB2 and my workstation boot

Q1. How to enable detailed logs from GRUB2 and early system boot?
I have a vague understanding of the boot process from power-on until 'init' runs.
I'm trying to understand more about what is going on in the GPT/EFI boot world.
{blush} Eventually, I'll start learning about 'systemd' as the 'init' utility.
I seek logs so that I can see what is going on to enhance my understanding and as diagnostic for whatever configuration I might be trying.

My workstation has three internal "drives" --- one HDD and two SSD. In addition, there is a docking station that has a device tray that carries whatever I want as a 2.5 in "drive". Lastly, there are whatever I might have connected using USB. Any file system on any of these might be bootable based on the project at hand.

Q2. Can someone help me create and configure a reasonable, general purpose "boot menu" ?

It doesn't look like there is any way to have a dynamic menu based on which file systems are connected at the time of power-on. What would I need to do so that I might "chain load" (or similar) when my tray drive has multiple bootable file systems. My dream would select the tray-drive from power-on then get a "chain-menu" to select one of the tray file systems to finish the boot.

{grinning}Yes, Mr. Beam and Mr. Daniels Mr. Guiness have contributed to my project plans.{/grinning}

Thank you in advance,
