how to configure xsane startup details

I use xsane to grab images from my HP scanner.
Q1. What are all of the choices presented in the startup screen?
Q2. How do I configure so that I use the same one every time?

Once we deal with the "device" selection...
Q3. How do I configure all of the other settings for scans that I use all the time?
My scanner is able to process pages that are 11x17-in (27.94x35.56-cm) "tabloid" sized as well as more common "letter" and "legal" (USA) pages.
Q4. How do I configure xsane to scan a specific size?
Q5. How do I configure to crop pages after scanning?
The v0.999 edition of xsane does not let me modify the scan size in the application dialog box. See sample image attached.
