Need to connect 2 physical desktops to my laptop server?

Hello, i'm Richard McDonald, I have created a server using Proxmox, but I also have 2 physical separate desktops that on one I want to run Linux mint, and on the other for my wife a simple but secure distro that she can get adapted to.
My current ProxMox server is running my home network through the Omada software controller. I is an old laptop with only a 1tb of storage and 2 processing cores. My server is a Toshiba satellite, on the other hand my desktops are all newer hardware running Windows 11.
I would like to run Linux Mint on my desktop, and my wife on the other hand a linux desktop version that is secure and user friendly for her.
I also have an external harddrive that is I believe 8tb.
I want to have both desktops on the server but running in its own container?
I need a little guidance on this, also I would like to create my own cloud storage for my whole network and not a subscription.
I would appreicate some friendly suggestions moving forward. Thanks.
