Linux computer on usb drive

I would like to have a usb drive which I can plug in to any computer and it will run as a linux computer, including having documents etc. I am using Linux Mint 19.2 on an Intel NUC as my main computer. I have a 500Gb USB drive available with nothing on it. How should it be partitioned?
