Raid5 to zfs confusion

I have mb with intel raid storage & 3 drives. Will be running Server 2019 std in a vbox
Setup raid 5 (just after the bios but before the o/s)
Boot off Debian 10 live & when i go to install it doesn't see the raid5 just lists the 3 disks
Do some research...apparently I'm a fool for even considering Raid5 & should use zfs
Install debian 10 to the 1st choice (drive 1 - sda)
Follow youtube and instructions on how to install zfs
While trying to create a zfs pool was warned NOT to use "sda/sdb/sdc" but rather the UUID
do a lsblk -f and it lists separate uuid's for the partitions on sda & no uuid for sdb or sdc

I don't know how to make a raid5 - which I believe is called zfs raidz using all 3 disks and containing the debian o/s
It appears that I should make a raid1 out of sdb & sdc but then I have a 1.8tb drive (sda) that's only being used to host debian. Seems like a massive waste of space and would be better off getting a small ssd drive instead for the o/s
If I do mirror setup I'm assuming I'll install virtual box on the sda drive and store the .vbox file on the sdb/c zfs mirror

Is my thinking right? Is there a way to make all 3 drives a raid5(raidz) including the debian o/s.
How do I find the UUID of the disks and not the partitions?
