Ubuntu defaulting to wrong sound output...

Hi
Is there anyway to stop Ubuntu from constantly switching to digital output - built in audio? I need it to use the inbuilt audio on my screen ie HDMI display port etc etc. I've fiddled about with Alsamixer shifting the sound card from the HDA Intel default to one of my two Nvidia cards but that switches too... Please speak slowly, in short sentences as I can tell that sound is a can of worms and there's a good chance I won't understand... I have no idea what causes the switch BTW - I thought it might be SkyrimSE or maybe Steam but I don't think it is... it **seems** to be random...(hmmm I don't like that explanation when it comes to computer systems). I wondered if Ubuntu is occasionally checking through stuff and doesn't like my choices, or something running in the background is triggering it... I'd really like to know what's causing it and even more I'd like to beat it into submission! :-D
