[SOLVED] Linux Server Deployment and Changes

I am fairly new in Linux world. After learning basics of Linux, now I have just started to learn System Administration. Out of curiosity, a question came into my mind, for those of you who are fortunate enough to work on Linux Servers. That is:

When you deploy a Linux Server, do you keep it as it is? or make changes in it? For instance enabling/disabling SELinux, Disk Quota, ClamAV and other things which do not come by default in some Linux Distributions.

Can you share your practice and the changes you make in this regard, so the beginners like me can learn from your knowledge and practice?
