Debian Bootable USB Creation?

I want to create a bootable USB of Debian stable. I take it the GUI is determined after install or is it by choice of download? I see I need three downloads of almost 4 GB each, but is that necessary? Will just one do? I have a 16 GB USB stick among others.
I will be booting with an old HP, HP-Compaq-8100-Elite-SFF-PC, i5, 64 bit.
It does not use UEFI.
I think my HP is i386 and I am checking.
Does Debian dual boot well? That is is the installer user friendly? Might I need Gparted?
