Changing hostname and IP number

All,

I have built a file server to replace an old one. Now, the final step is to change the hostname and IP address of the new file server with the hostname and IP address of the old one.

Questions:

1. What would be the easiest way to do this?
2. What are the steps?
3. What files do I need to change?
