I figure that the question in the title made you think "There surely is, whatever it is"... and that's what I think, but I don't know of it. So this is the thing:

I remember old Windows 95 and 98 installations. I hate Windows, but anyway, there was one thing about those installations: you were allowed to individually choose which tools to install and, later on, if you wanted to install any of those, you could use the same CD and you could install the tools with the system running. I want something kind of like that.

What I do NOT want is a distro whose installation requires an internet connection. I would like to be in the middle of the mountain, insert a DVD or plug a flash drive and install everything I need from there and be able to not install packages I don't want and to leave for later some and when I want to install them, to be able to do it from the same media, without the internet. Is there a distro or installation software that gives me this?

If not, another possibility could be to be able to make myself a distro. Not to have to set up everything, but like to start from an existing one, make some modifications installing what I like and then turn that into an installable distribution. Can that be done? Is it too much work? I wouldn't be rebranding or publishing anything. It'd be just for myself.
