Another boot dilemma

I have removed one of the "ubuntu" options in my EFI setup.
I have never discovered what is the official name of the "ubuntu" file option in UEFI setup.I am guessing the person using Ubuntu in mutiboot system would know what I am talking about.

I still have TWO partition named "EFI System Partitions" on TWO HDD flagged "boot,esp" - according to "gparted".

BEFORE I removed one of the "Ubuntu" options from EFI setup I was getting TWO different grub menus - one with "System setup " option and the other with "EFI Firmware setup".

Now I am getting only one grub menu with "System setup" option.
To my best knowlwdge ALL my stuff is EFI , but this "grub" menu looks as BIOS menu. I am NOT interested in BIOS , non EFI compatibility.

I just like to know WHERE is this "System option " coming frominstead of EFI firmware ... as before.
I am not so sure I want my UEFI setup to reset the boot process, that seldom works on first trial.

I have one minor incentive to get this resolved.

I grub menu I select "/dev/sda6" to boot from.

In gparted I have NO /dev/sda6 partition.

In /dev/sde I have boot,esp flagged partition and /dev/sde6 BUT it have no operating system on such partition.

( there is a way to identify which hardware partition is actually being used by OS , but I forgot how. I have been using "grub set " )

I understand Linux hardware designations such as /dev/sdxx can change between shutdown / reboot, but how is my OS booting from nonexistent partition- according to "grub".

BTW "grub" gets updated by most "install" or by me manually when I run "update-grub".
