is it possible a live watch variables with GDB ?

I've been going crazy looking on the net but I'm still not sure if it's possible or not.
My intentions are to debug a program without having to stop its execution.

I have found a lot of information about non stop mode with I try to do the same process without success.

So, is it possible or not ?
