Ubuntu server with a desktop enquiry

I've never even begun to look into what I might need a server for, but I did recently look into using Ubuntu's server image for the Raspberry Pi, 20.04, which provided a guide to then adding a desktop environment. That experiment had some glitches that led to me abandoning it, but I did wonder if the regular amd64 server image could be used for another computer and to then just add what I've become used to - Openbox and a small number of applications.

I'm aware of the netinstall-like method, which seems to be discontinued after 18.04, but I did wonder if the size of the server image is largely server-specific or in any way a problem in the context of my 'custom desktop' purposes. The fact that Ubuntu has this Raspberry Pi provision using the server image (one that is about 30% smaller than the amd64 image) suggests it's not too wacky an idea?
