Installing on encrypted partition

I am attempting to do an install of MintMate 20.04 on an Intel NUC with a 128 GB SSD. I wish to have / and /home on encrypted partitions. I have accomplished this. However, The installer/partitioner required me to create two unencrypted partitions. One is for /boot and the other is an EFI partition.
If I allow the installer to "use the whole disk" and automagically install it creates a single boot partition which mounts as /boot/efi. Can anyone advise me how to create this combined boot and efi partition along with my encrypted partitions? I have worked though countless permutations with the installer. If I create /boot first the installer tells me I need the EFI partition and if I create the EFI partition first it tells me I need /boot. It is only an extra 512 MB wasted but it is the principal of the thing.
