Disabling Updates

Hello, since 2014 im using windows 7 without updates/antivirus and have no problems but i want to change to linux. Can i use linux without updating and is it a problem? I'm looking at Manjaro KDE and Kubuntu. Once I install softwares I am not going to update them since i don't see point in updating libreoffice or kdenlive for example. I will update them manually if necessary. I will be using it mostly for online activities and movies and my applications will only be kdenlive, libreoffice and Gdevelop + Gimp.
