[SOLVED] Grub vs UEFI

I run a duel boot Windows/Ubuntu set up. I have the option in my UEFI interface to choose between booting Ubuntu or Windows. If I choose Ubuntu in UEFI, Grub loads right after, and then for the second time I have the option to choose between either Windows or Ubuntu again. However, if I choose Windows in UEFI it boots right into the OS without another interface.
Correct me if I'm wrong but from what I understand Grub is not a legacy BIOS firmware or UEFI, but rather an EFI interface, right? So I'm booting from a UEFI interface to a different EFI interface. Although it's not a huge deal, it does seem rather redundant to have both.
1. Is it possible to skip Grub and boot right into Ubuntu from UEFI?
2. Or possible to replace both the UEFI that shipped with my computer and Grub with a different open source UEFI interface?
3. Is Grub EFI or UEFI?
