question about commercial VPN provider NordVPN with Linux

i have discovered that NordVPN can operate with /usr/sbin/openvpn instead of their own Linux client. what i have not determined is how they keep the keys and how routes might be managed or not. i expect to use the "ip route" command manually and/or in scripts to do this myself, if i choose to use their service. what i want to do is leave some hosts and/or networks not routed through the VPN. a sample openvpn config file to use them might be a big help (be sure to obscure confidential parts).
i'd also like to use their service with 2 or more VPN sites active, such as one in Norway and another in Sweden so i can access certain sites in both countries concurrently. is this possible with NordVPN or some other VPN provider you can name (privately, if you prefer, or is required here).
