The right device for me?

Hello All
Thanks for availing me of all of your resources. Iim a newbie to linux and this is my first question to this forum, so it made sense to start in the newbie category.
I wanted to start to familiarize myself with Linux for many reasons and having recently found myself with some time to do so I decided a good place to start was to repurpose an old tablet I have. After doing a pretty good bit of research I decided to load Ubuntu Server 22.04.2 LTS (jammy jellyfish)(Iim comfortable with line item control and needed something slimmed down) onto my Winbook TW700 tablet running windows 8.1.
A (I thought) pretty straightforward little project ended up ultimately frustrating me as I just couldnit get the distro to load and run. My research indicates to me that the reason is most likely a Phoenix UEFI with isecure booti that cannot be turned off and that just will not allow any other bootloader to run. No matter what approach I took I just couldnit get around that issue. I couldnit find a newer bios that would allow me to turn off isecure booti, The Ubuntu distro I selected is isignedi leaving you to think it would load but no joy, not even as a dual boot. Thatis a shame, as had I been successful, I believe it would have been a perfect platform for what I had in mind.
Anyway thatis how I got here today. So my question today is could someone suggest to me a a similar device be it tablet or perhaps a mini pc that they know will allow a successful installation? With some guidance I will fish for something used as money is an issue. Iim looking for something packaged with a small footprint like an old tablet or perhaps a mini pc (not a Pi or laptop). Thank you for your time!
