Boots in 10 minutes after misc changes!

Hi all. I recently installed PopOS on my pc desktop build. I've had Win 11 running for some time now & decided to try a Linux distro on it.
Symptoms
Worked beautifully at first, but now it takes literally 8.5 minutes to get to the screen where the motherboard manufacturer's logo appears. :eek: And another 7ish minutes until I'm at the Pop Os login screen, if I ever get there.
First thing to appear is a black screen with an underscore symbol in the top left. Then, the Motherboard screen (Gigabyte in my case). Then, more black. Then, PopOs login screen.
Once I'm fully into either OS (Win11 or PopOs)... everything is normal. Load speeds and performance is fine. It's ONLY the boot times that are greatly exaggerated.
My Speculation
I'm not really sure what changed. I updated PopOs and installed a few apps from the app store. All of the sudden I can't login in less than 15 minutes. Sometimes I can't even interrupt the boot cycle (by hitting F10 on the motherboard startup screen) to get to my Windows 11 side.
I went into the bios after this issue arose. Nothing seemed off to this newbie. However, I did receive a notification that the "last modified" thing was "CPU Clock Control"... which I did not adjust, intentionally anyways. Pic of this attached below.

I've been dabbling in Linux for several months now, but this is new to me. Any hints or tips appreciated.
Hardware
Cpu: AMD Ryzen 5000 series
Gpu: Nvidia GeForce 10 series
Motherboard: Gigabyte B550 series
Memory: 16gb
Storage: Multiple drives, some ssd, some hdd.
Operating systems: Windows 11, Pop Os
