Multiple IP Addresses - Ubuntu

So I have installed Ubuntu Server - no GUI - and it was using my DHCP server for its IP address which I now want to change to static.
Now I am very new to linux but it seems like its going to be almost impossible to master but I now hate microsoft so want to persevere.
The issue is when I google how to set a static IP on Ubuntu Server I got a guide telling me to alter a file in Netplan called 99_Config.yaml which along with a few other commands worked until a reboot.
I have searched more and another tutorial tells me to alter a file called 01-netcfg.yaml which again worked but has now left me with the adapter having the static IP and the old dynamic one with the server accessible on both. I deleted the dynamic one but after 10mins or so it comes back. ( I also cleared the 99-cofig file)
So I searched again and now found another site telling me to alter a file called 00-installer-config.yaml?
I appreciate that free software is never going to be perfect or even easy but surely there is a standard method to set IP addresses.
What am I missing and what are all these different files? and does anyone have any advice to solve this issue I really don't understand whats going on.
