Instant, total system freeze on copying large folder

I recently bought an external HDD dock to pull some files from an old system onto my laptop, but while copying files my whole system would suddenly, instantly, and completely freeze. No tty access, no REISUB, just frozen. I tried various things and eventually realized my internal SSD was failing it's SMART check, so I replaced it this morning and have been setting up all my old programs.
After setting everything up, I again try to copy over the same folder (of old Unity3D projects) and boom! Frozen again.
My theories are either internal SSD temp, or maybe corruption on my backup drive? How can I even begin to diagnose the issue?
I'm running Ubuntu (Studio), let me know what other information is helpful!
