too really be root on bookworm?

Hi all,
I have encountered what for myself is a problem, in as much as to have proper root access I have to type an extra command "su -" so that I can run programs, otherwise it says in terminal cant find the program (or some such report).
Can this what could be an extra layer of security be turned off.
As always any help much appreciated.
