I need a Linux Distro that will NOT go to Sleep etc for 60hrs of Network Traffic monitoring

Good morning or evening as the case applies.
I am in need of a Linux distro (compact is good)to run a 24/7 live monitoring task on a Headless Mini PC (Zotac ZBox-CI320NANO) monitoring Level 2 activity of the OSI 7 layer on a 1Gbit Australian NBN
Fiber feed to the Premises, and live streaming the results.
So far latest Karli release seems to be close but even with the follow setting after 3 or 4 hrs goes in some form of Hibernation or Like ( blanking the temporarily connected HDMI screen, that I cannot recover from. This hardware I am using only has one user button.
I have gone into Power Manager,
GENERAL and set 'When Power Button is pressed to "ASK" and the other 3 button options to "DO NOTHING"
SYSTEMand set 'System Sleep mode to:SUSPEND and slid the "When Active for" slider till below it it says "NEVER"
DISPLAYand slid all 3 slider (Blank after, Put to sleep after and Switch off after) as far left to make all Read "NEVER"
I have tried a few, Ubuntu, Karli, Mint, but no matter what I do to setting they all, appear to go to sleep.
I am favoring Kali DARK mode with the ability of it to have the 8 terminal windows to run the monitoring tasks in.
These tasks inc Monitorix, mtr --tcp --port 1.1.1.1 {as an example}, just installing CACTI
What am I missing, apart from a strong Coffee or Tea ? Maybe in my +50 years of computing I am expecting too much ??? Might be easier to crank up my DEC PDP8E and connect it to the web?
