to me, off the grid means living in a community like the Amish or some tribe in the bush in some obscure place in another country other than 1st world.

I'd do that, actually. The Amish have a decent community, nice lifestyle, quite relaxed, hard working people, friendly and rich. Besides not having a laptop and the internet, what's there not to like
